Bake of the Week: Biscotti

There are only 4 Episodes of The Great British Bake Off left! We repeat – there are only 4 episodes to go and this week it’s Italian week!

There are so many sweet Italian treats that we would love to spend time baking and then eating but our favourite is biscotti.

Follow our recipe for Almond Biscotti and you’ll be munching away in no time!

You will need:

  • 145g blanched whole almonds
  • 1 tsp baking powder
  • 1/8 tsp salt
  • 260g all-purpose flour
  • 150g granulated white sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract

Pre-heat the oven to 180C.

Toast the almonds for 8-10 minutes. Once they are lightly browned, leave them to cool before roughly chopping them into pieces. Turn the oven down to 150C and line a baking sheet with greaseproof paper.

Beat the eggs, vanilla and almond extracts together in small bowl. Set this bowl aside and in a different bowl mix the flour, sugar, baking powder and salt until they are blended together.

Add in the egg mixture gradually and beat until you have a dough. Remember to add the almonds in about halfway through mixing.

Lightly flour a clean surface and roll the dough into a log about 35cm long and 10cm wide. Bake this log for 30-40 minutes.

Once this time is up, take the log out of the oven and leave it to cool before cutting it up into slices about 1.25cm thick diagonally. Arrange these slices evenly on the baking tray and bake for a further 10 minute on each side until they are firm.

We now have the perfect snack to nibble away at with a tea or a coffee!
